"Basically essential" is not essential. vim seems essential too, but
it's not installed by default. There is some basic task that you should
be able to choose with tasksel that would include everything that you
would expect to find on a server like sudo. Maybe it's even the "server"
task.

You could just make a meta-package that depends on all the packages you
want, put it in your own apt repository, and apt-get that (apt-get
install lanielspackage or whatever).
