[Linux-disciples] Multiple network interfaces; how to chose?

I often have both a WiFi and CAT5 network connection up on my laptop.
Does anyone know how linux decides which connection to use, assuming both
connections go to the Internet?  I had thought it was whichever
connection is brought up later, but that doesn't appear to be the case.
What I'd really like is for it to prefer the eth0 connection if it's
there, but if there's a problem or no connection, it will switch to WiFi.
Any idea how this works?
